Coffee tagliatelle

Coffee tagliatelle are ideal for a light summer lunch. An unexpected combination, ideal for impressing friends and family with sophisticated and special pairings.

PREPARATION

To prepare the tagliatelle, sift the flours together with the ground coffee.
Make a well in the flour and add 5 eggs.
Knead for 5 minutes until the dough is firm and thoroughly mixed.
Cover the dough with cellophane and let rest for one hour.
Roll out the dough on a wooden board and make the tagliatelle using the pasta machine.
Break the goat cheese into pieces and place in a small pan with the milk and cream.
Add salt and pepper to taste and stir the ingredients until the cream becomes thick and smooth. Cook the tagliatelle.
Sauté them with butter and chopped hazelnuts.



COMPOSITION

Pour a thin layer of cheese sauce on a plate, sprinkle with hazelnuts and ground coffee.
Place the tagliatelle over the cream and decorate with cheese.
Finish with a final sprinkling of coffee. Bon appétit

  • 150g (5.3oz) all-purpose flour
  • 5 eggs
  • 25g (0.9oz) coffee powder

  • 100ml (3.3fl oz) milk
  • 100g (3.5oz) cream
  • 75g (2.6oz) hazelnuts
  • 100g (3.5oz) of butter to sauté the pasta
  • 5g (0.17oz) coffee powder
